Applesauce, apple pie filling and lemons - oh my!

Today, my friend Rebecca and I got together to do a little canning! We had split a large box of apples and lemons from Bountiful Baskets this past weekend and needed to put them to good use!

So, we started with the applesauce and went on to make apple pie filling, lemon sorbet and lemon bars...I feel like I am forgetting something but the kitchen was a-buzzing!

I had to leave so I did not get to try the lemon bars, since they just came out of the oven, but I've heard they were yummy and I plan to make some this week as well. I have tons of lemons leftover so there will be lots of fresh lemonade in the freezer as well as some lemon marmalade/jam type stuff and plenty of cooking with fresh lemon juice going on! I think that I will also make some sugar free apple jelly with the remaining apples (there were not as many leftover apples as lemons, of course!)

Thanks for opening up your home to this mess, Rebecca! I had so much fun and so did Avery and Mayci! BTW, to everyone else...it's as if the boys knew we were busy and stuff we wanted to accomplish as they played remarkably well today!

The applesauce! It is sooo good!

Lemon Sorbet...Avery even loved it and it was tart!Oh, I should mention, when we got home, Avery disappeared with some canning jars I did not use. I found this sitting on the end table a little while later. He told me he "can" just like mama!
